Sweet Potato Pancakes
These pancakes are fabulous – flavour them with cinnamon and pile up with Greek yoghurt, fresh berries and maple syrup, or flavour with cumin and serve with turkey bacon, roasted tomatoes and crumbled feta.
- 2 medium sweet potatoes
- 4 free-range eggs
- 2 tbsp ground chia seeds
- 1 tsp baking powder
- 1 tbsp coconut or light olive oil 1⁄2 tsp ground cinnamon or cumin (depending if you want them savoury or sweet)
- a pinch of sea salt
Preheat the oven 200°C. Once heated, pop the potatoes on a baking sheet and cook in the oven for 35 minutes. Allow the potatoes to cool then peel off the skin.
Mash the potatoes well with a fork. Whisk together the sweet potato, chia seeds and eggs until well combined, then add in your choice of spice and a pinch of salt. Heat the coconut oil in non-stick frying pan over a medium heat.
Drop large tablespoons of the batter onto the pan and cook for 3–4 minutes.
Flip each cake and cook for an additional 3–4 minutes, until lightly golden brown on the outside and cooked through.
