Back on Track: Easy Exercise, Done ANYWHERE!

Roasted & Spiced Cauliflower Wrap

This roasted & spiced cauliflower wrap is the perfect quick and nutricious lunch option to keep you firmly fixed on your fitness goals.

Ingredients

  • 1⁄4 cauliflower, broken into small florets
  • 1 tbsp extra virgin olive oil
  • 1 tbsp yellow spice paste
  • 2 tbsp tahini
  • a squeeze of fresh lime juice
  • 1 tsp sriracha or hot sauce
  • a handful of baby spinach leaves
  • a couple of pickles, sliced
  • super seeded flatbread or a wholemeal wrap

Method

Preheat the oven to 180°C. Line a baking sheet with parchment.

Toss the cauliflower with the olive oil and spice paste. Bake on the baking sheet for 15 minutes.

Mix the tahini with lime juice and sriracha. Place the spinach, roasted cauliflower and pickles on half the flatbread then drizzle on tahini sauce and roll up.

Spoon into deep bowls, sprinkle on crumbled feta cheese and herbs to taste.
